One cup of strawberries gives you a whopping 140 percent of your recommended daily allowance of vitamin C. Strawberries are also packed with flavonoids, two in particular, called quercetin and kaempferol. Research shows that these two flavonoids help keep bad (LDL) cholesterol from oxidizing and damaging artery walls.

Strawberries also contain ellargic acid, which is also found in raspberries, cranberries, and grapes. Ellargic acid acts as a scavenger to bind cancer-causing chemicals, making them inactive. It inhibits the ability of other chemicals to cause mutations in bacteria. In addition, it prevents binding of carcinogens to DNA and reduces the incidence of cancer in cultured human cells exposed to carcinogens.

Prized in ancient Rome for their medicinal uses, strawberries are high in fiber, folate, potassium and antioxidants, making them a natural means of reducing the chances of heart disease, high blood pressure and certain cancers.

Strawberries contain several nutrients, minerals, and non-nutritive chemicals that are important for human health. A search of available medical and nutritional literature shows that strawberries are an excellent source of vitamin C and manganese, and a good source of dietary fiber. In addition, strawberries contain a plant pigment, anthocyanin, which has been used for studies in preventing initiation of cancers. Strawberries contain a unique phenolic group, ellagotannins, which are effective in preventing initiation of esophageal cancer.

Strawberries raise the antioxidant levels in the body. The ellagic acid they contain appear to inhibit the growth of tumours. They are also a good source of salicylic acid.
